I've started this blog because I'm obsessed with food. I wanted to create a fun blog for others who like to cook. My blog will be full of great recipes. I love just throwing ingredients together and coming up with tasty new recipes...So if I refer to a chunck of cheese or a handfull of tomatoes get use to it. I will be posting video recipes as well so you can cook with me - just tune in.



Roasted Sweet Potatoes

2 Sweet Potatoes

Peel and cut sweet potatoes into cubes

2 tbls olive oil
2 tbls honey
salt and pepper

Toss to coat olive oil and honey over potatoes add salt and pepper for taste cook at 350 until potatoes are tender.

STUFFED BACON WRAPPED CHICKEN - FIRST RECIPE ON MY BLOG

SERVING SIZE 2 - (since I normally cook for 2 most my recipes will be for 2 people you can adjust accordingly)

Pre-heat Oven to 350

Pound out 2 of your 4 chicken breast until they are thin
Cut just enough cream cheese so that you can still wrap the chicken around the cheese
Place cream cheese on one end of chicken with 1/2 tbsp of garlic powder and a small piece of butter
Roll chicken around cream cheese mixture
Dip Chicken in egg whites (beaten) or dip in milk then roll chicken in the Italian panko breadcrumbs
Wrap a piece of bacon around the chicken
Place on foiled oven pan - cook 20 to 30min till chicken is no longer pink
*If you like your bacon crispy cooked the bacon for a few minutes before wrapping around chicken

*You can bake the other 2 chicken breasts at the same time for a quick dinner on Tues. (grilled chicken salad with avocado and homemade blue cheese dressing) or marinate them with light italian dressing and cook fresh on Tues.

MOCK BEEF CARPACCIO

I love this recipe - I made this up a few years ago when I was craving this Carpaccio dish I had at one of my favorite Italian restaurants in Raleigh, NC "518"

Traditional Carpaccio is made with beef tenderloin - this is my quick version that you can make anytime you want a light healthy dinner or a quick appetizer.

1/2 pound of deli shaved roast beef or london broil (my favorite is dietz & watson's London Broil)

Shaved parmesan cheese - you can use a potato peel to shave parmesan from your block or you can buy shaved parmesan cheese at the grocery store.

Handful of capers

Tablespoon olive oil

Greens (spring mix or arugula)

Prepared horseradish

Spread the roast beef over a plate or platter, place shaved parmesan on top of roast beef -chop greens and mix a tablespoon of olive oil with greens - place on top of roast beef and cheese sprinkle capers on top of dish and place horseradish in a small bowl and serve on the side.

You can eat this dish just like this or you can serve with toasted baguette bread slices just take a little roast beef with the cheese and capers and top with horseradish on top. Enjoy!

CHICKEN SALAD WITH AVOCADOS AND BLUE CHEESE DRESSING

Chop the lettuce and slice the avocado

Blue Cheese Dressing:
4 ounces of roquefort cheese or gorgonzola cheese
1 cup of Mayo
Splash of white wine or a squeeze of lemon juice
salt & pepper for taste
a little cream

mix all together

2 Grilledl chicken breasts

serve blue cheese dressing over lettuce top with sliced chicken breast and sliced avocados

GREEN SPAGHETTI

INGREDIENTS NEEDED

BASIL
PARMESAN CHEESE
CREAM CHEESE
OLIVE OIL
GRAPE TOMATOES
SALT & PEPPER
CHICKEN BROTH
PASTA

GREEK PIZZA

Pre-heat oven to 350

Bake prepared pizza dough for a few minutes in the oven

Top pizza crust with left over pesto from last night
a little marinara sauce
chopped kalamata olives
chopped green peppers
feta cheese
and a little bit of mozzerella
cook until cheese is bubbling and crust is crisp.

ARTICHOKE DIP

I like to get together with friends after a long work week and what's better than a few cocktails and some appetizers.

1 can of quartered artichoke hearts
3/4 cup of mayo
1/2 cup of parmesan cheese
3 cloves minced garlic
dash of hot sauce

chop artichokes in small pieces - whisk garlic in with artichokes - mix the rest of the ingredients with the artichokes and garlic place in casserole dish and bake on 350 for 20 minutes until the top is golden - serve with tortilla chips, crackers, or bread rounds
